New Recipe

I am desperately trying to find new and interesting recipes to try. I am tired of making the same old things all the time so I have decided that at least once a week I will try a new recipe. Here is what I made last night (the pic does not do it justice).



Creamed Chicken and Biscuits

Ingredients

1/2 large onion (I obviously substituted this)
1 1/2 tsp butter
4 cups chopped cooked chicken
1 can cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup pimiento (I substituted this with calda, Ana and Necy will know what this is)
1 cup shredded cheddar cheese, divided
6 frozen biscuits, thawed

Directions

1.Preheat oven to 350 F. Grease the bottom and sides of an 11x7 inch baking dish.
2.Chop the onion. Heat butter in a small nonstick skillet over medium-high heat until melted. Stir in onion and saute until tender.
3.Combine onion, chicken, soup, sour cream, milk and pimiento in a medium bowl and
mix well. Spoon mixture into prepared baking dish. Bake for 15 minutes. Remove from oven.
4.Sprinkle baked layer with 3/4 cup of the cheese. Arrange biscuits in a single layer over top. Sprinkle with remaining cheese.
5.Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes longer. Serve immediately.

Hmmm...Can't Think of a Good Title



Found this video on a friend's profile and while I've heard this song a million times before (when it was ube popular years ago) it made me really stop and think. Time is WAY too short. We need to stop and evaluate what is really important in life. I am going to make an effort to start really enjoying the small (important) things in life, like watching me 2 monkeys dance up a storm whenever I put on music. And not getting so worked up over a hockey game:)

Which brings me to my next topic (awesome segue!!!). Our household has become fanatical about hockey. We were just watching/listening to Canucks games (the ONLY team that matters!) but have started watching all the western conference games to see where everyone is at in the standings. We're keeping close tabs on the Flames because, quite frankly, I hate those guys and would love to see them go down in, well, flames. I was so excited to see the Canucks come back from a HORRIBLE road trip (4 losses, ikes) to just slaughter the Flames. We cheered so load last night! I only hope they can keep up the great play so they make it into the playoffs.


Oh and a little note for Joanne. I originally told you that that song Smile a Little Smile For Me, Rosemarie was not an inspiration for Miss Rosie's name. I was appearantly mistaken. Paul never told me but that song was a big part of his choosing her name. I don't know why he never bothered to tell me but whatever. Men are just weird.

Rosie

Wow, my little girl is growing up super fast. She is now doing chores (she has 2...tidy up the living room before bed and help unload the dishwasher). As such Meio and I have decided to give her a small allowance every week. I'm going to go go buy her a piggy bank from Ikea next week. Tomorrow Rosie gets to go to her first "theater" movie, Horton Hears a Who. Meio is taking her so it should be a fun daddy/daughter experience. We've been getting her excited for the last week, showing her the trailer over and over on the computer (she keeps asking to watch it). I can't believe Miss Rosie is getting so big.
